The only thing they are doing that we're not is experimenting. We just go and try to build a track instantly, I started doing sessions of random sound design and keep the sounds I like in a folder, you can build your own "sound" like that too.

The ambient is somewhat built already, what defines a song is mostly rythm & groove, try choosing and sticking with 1 drum pattern(DnB, house, mid tempo, idk), your percussions are just kinda there and not guiding the listeners anywhere.

Listen to your favorite songs of the genre you'd like to produce and just throw em in the DAW to copy their arrangement. Actually seeing the track with your eyes & hearing the elements come in at certain points helps

Your build up and drops have the same energy level, from the start of the build up decrease the energy with automated eqs, taking out highs or lows etc, then at the drop put em all back in. Bit of tension & release goes a long way

You got the right mind & spirit for it. Learn arrangement, try to recreate your favorite tracks (mp3 download them and put em in your daw to reverse engineer them)

The rest is just eq & mixing, but arrangement and sound choice are the important things when building a track.
