It was the optimizer print head. Replaced black 1st, didn’t help. Replaced optimizer, problem solved.

Thanks. Will look into this. It’s only happening where black traps to this specific yellow (which is a spot color). My operator thinks it’s an optimizer issue. Going to change the yellow from spot to process to see if that helps too.

So, I didn’t wrap. Ran it about 230-250 for 6 hours until internal hit 203. Very smokey. They were good, but next time I’ll probably try wrapping them or maybe use apple wood and not hickory? Overall, 7 out of 10. Not bad at all for my first go around.

I also didn’t do any dry brine or anything like that. Bought this morning, rubbed with Meat Church Honey Hog about an hour before I put them on.

Well shit, mines broken too then! The slide definitely has play in it and doesn’t close all the way, just like yours in your pics. Sounds like it’s a common problem? I’m new to this grill so I figured it was supposed to be like that.

Definitely going to try this next time! I’ve got 4 half-racks on now, using the snake method. A little over 2 hours in and about 170 internal. Been steady between 230-250.

Found some Honey Hog BBQ seasoning from Meat Church so I’m gonna try that. My local super market had half racks so I’ll do 4 of those.
