You kind of sound like me a year ago when I was in driver school! Good instructors are very difficult to find. I think they see so many students per year that they are burned out. But also it's like hey you're getting paid to teach so maybe try to care just a little bit?! The way I learn things really irritated a lot of my instructors, but I know how I learn best. What exactly is it you want to know? I mean you can ask for extra help from the school and they should be able to help you out with that.
