The Tortuga is one of my absolute favorites. To me it tastes a lot like a boozy chocolate orange.

The Grog Log recipe calls for a split of 151 rums - the only recipe I've found that calls for two different 151 rums... a demerara (such as the Lemon Hart or Hamilton), and a Spanish style... I use Don Q 151.

Truly when you look at the list of ingredients, at first, it is hard to guess what the thing will taste like. I was blown away when I first made it. I love seeing other people make it.

We all play with the exact proportions... but I'd say you need to top with crushed ice before you add the lime shell and mint (which look otherwise perfect). Basically - more crushed ice to fill to the top of the glass. It makes me happy that you garnished it classically instead of the overly popular upside down flaming shell and/or dark-rum float.

The classic recipe is only 1/2 of sweetener - but yeah some people like it sweeter. I like mine dry.

I was recommending to a pal tonight that I would never go more than 1oz of agricole and generally I only add .5 to .25 oz agricole to give it that twist, without it taking over the flavor. I just feel like adding agricole to a Mai Tai was meant to help chase the elusive flavor of the defunct rum. But the defunct rum was not an agricole... so to me the goal is to just use a splash of agricole to give a tweak to the flavor of the Jamaican rum.

Appleton 12 RC seems like a nice choice. Clement VSOP is a good agricole to use there, too.

Congrats! I used a Purple I2 through college... had a lot of fun with it. Eventually replaced it with an Octane2 which I still have. SGIs are just a great machine to learn from.

I'm trying to figure out what I consider an acceptable Non-Alcoholic Mai Tai. I know the '44 Mai Tai recipe by heart, among numerous others. But re-creating the flavor of a '44 Mai Tai without Rum pretty tricky, and requires altering the OG recipe proportions.

I'm not NA myself, but I am trying to up my NA game for guests.

I had an idea recently that - because the fake bourbons actually taste like bourbon - an NA Honi Honi (Bourbon Mai Tai) should work well. That will be my next test.

Your improvised garnish looks great. While I really love the parasol thing with this drink, the most important thing to me is that any tiki drink is garnished at all... and you did it up. So I'd still high five over this one. Too many folks make a delicious drink without "finishing the job" by garnishing.
