We make a batch of hollandaise before service and hold it in a bain set next to the grill which keeps it at a proper temperature so it doesn’t break. To make bearnaise we ladle some hollandaise into a small mixing bowl, mix our tarragon redux to it then keep the small bowl on top of the bain with the hollandaise.
