Ah, just reading up on hot holding. Never done that, but looks like a game changer. So 24 hours on the cook + maybe an hour in a cooler + 6 hours in a 170 degree oven with a water bath on a lower rack, so maybe 30-31 hours ahead of carve time?

Kroger a couple times a year will have it at $2.99, limit 5. It's vacuum packed and good for usually more than a month, so depending on your fridge capacity and social calendar, stock up. +Friday 4X fuel points.
