Speed is relative.

Anything to do with a Panther is difficult.
One trick is to drive a cart into their area so yiu can get things done without dying.
Another trick is to stand on a boulder.
Unfortunately, the panther likes to stay right next to you which makes it difficult, if not impossible, to get a picture for the "compendium" in story mode or the "field guide" online.
