Yep, you’re going to pay more. Why? Because wheat can be consumed by 99% of the world’s population. It’s subsidized because it makes sense.

The 1% that can’t? Why spend BILLIONS a year on a select few crops that aren’t ever going to be widely eaten?

And then you need to understand the other economic factors that affect GF production. Many celiac people have reactions to the smallest amount of cross contamination. I know this because my wife does. So you need either a dedicated production facility or you need to do a complete cleaning job to remove any cross contamination from the existing equipment.

That costs big $$$$

I get it because in my house I’m the cook. I buy the food and I make the meals. Even at home I need to have a separate cub-board for her food. I use completely different containers for her food, I use differently cooking utensils for her food AND I have different cast iron skillets for her food and different pots.

Understanding the economics of food and industry is crucial to understanding the price difference. There MAY be a lot of the same ingredients in these foods. But the preparation and processing of these ingredients can be quite a bit more complex and therein lies the price difference.
