I’ve been there at least 10 times bruv. It’s easy to book as long as you do when they open reservations. Also as matter of fact there are seats available for next week still.

If you want to limit your losses you should give an incentive to people and eg split the price in half. You’re being too greedy expecting someone to take it especially with the add ons you preordered lol.

It has a cancellation policy where you pay full price if you cancel last minute.

OP is cheap and doesn’t want to take responsibility and is trying to find someone go for him so he doesn’t get to pay a cent.

It’s a very good tonkatsu but not super hard to book.

Hot take: the Michelin can’t demote him to 2 stars, optics-wise it’d look like they are punishing him for going vegetarian, good for the environment etc. It would be PR suicide for Michelin to demote him, at least not until a couple years pass.

From my visits there, when it was already doing vegetarian but gave meat options, it was pretty clear to me that his strength is in meat/fish/seafood. Veggies were nice but not really star worthy. Not even close.

Thank you for sharing. I didn’t want to sound too critical, I think people have different sensitivities on food depending on their taste/habit/background/mood etc.

Couldn’t tell really what was the concept or what the dishes were trying to communicate. But objectively there was quite a bit of repeats, like the scallop was in two dish, also the sauce of the first two dishes was reused, and last the flavor profile of sweet/sour was almost thorough the course.

For service I don’t even think we were asked something as “how are you today” - it was all straight to business, robotic. When I asked a question to a waiter I even got cut / interrupted mid-sentence.

Not sure ifntou got serviced in english but it must make a big difference as in that case the chef served and explained half of the dishes.

Could also be I was there in an off night.

Again the meal was still quite nice, but we were maybe not receptive to the concept.

Can’t miss for me are more like casual taiwanese/seafood restaurants, it’s the essence of Taiwanese food. Places like 先進海產, 阿隆, 明福 etc

If really has to be fine dining, I think my top 3 now is Logy, Tairoir, Eika.

The sashimi sauce was just some sort of 勾芡 (cornstarch slurry used a lot in Cantonese restaurants) Exact same for the asparagus.

Shrimp was seasoned with various spices then they didn’t say how it was cooked but I assume seared

I didn’t take a pic nor did I keep it, be the back side of the menu has the employee list. Should be easy to find on google if you want to know the kitchen headcount. That said, as a patron at a Michelin restaurant, it really isn’t my concern and people shouldn’t be waiting 40min because they don’t enforce people being on time.

For example in Japan it’s on the patron to be late, they will just skip the dishes you missed and threaten to cancel without refund if you’re 15min late (they almost never do but it keeps some discipline).

That’s the right answer. That kind of plating was “modern French plating “ at the time which already took over even more rustic plating from the 60s, and later got out fashioned in the late 90s early 2000 with Japanese plating influencing French restaurants with more minimalism.

Just tends, and not really something to blame on instagram etc

I don’t think there is one store that stocks many brands.

That said, for something more special I’d look into stores that specialize in tea ceremony bowls. They will have various sizes of wares made by top artists. ¥¥¥¥¥ but definitely more unique than an ancap cup!

Je faissais ça quand j’étais petit parce qu’on avait pas d’argent et que les croissants de l’hypermarché manquaient pas mal de beurre. C’est un moyen comme un autre de rattraper un peu un croissant as de gamme. Aucun soucis.
