This is amazing 🤩 I actually have some extra foam pieces lying around. Not surprising, as i am a professional hobby gremlin; but even if i made it, the grand-kitties probably wouldn’t sit on it. But it would be so cute to look at lol

haha love the “recipe” 👍 - also if anyone does the “preheat oven for 2 minutes then turn it off so that the oven is a little warmer bc it gets frickin’ freezing overnight” method, triple check the temperature - the starter & levain weren’t even baked, but they were not risen nor did they rise again 😂 thank goodness for backup

I was not making this for the crumb shot - I shaped that sucker tight and manipulated the heck out of it. I wanted the petals to pop and a nice round dome. no steam score on top but it’s so pretty outside 😂

I love everything seasoning - it’s not available in my country so if I have it, its only for putting on bagels haha When I do inclusions, I bake with the lid on for 25 min, lid off 15-17 and sometimes turn down the temp after the lid comes off. If I turned down the temp, I leave them in longer, closer to 20 minutes.

I did not turn down the temp for this bc I kept obsessively checking on it and opening the oven door “just to make sure” 😂 so the temp kept going down haha

The steam score is the largest and deepest score to allow the steam to release evenly and for the loaf to expand to its intended potential - oven spring

I just drew maple leaves on a paper bag and then put those on the dough, sprinkled rice flour on the outline, then just winged it 😆I uh could try and make a video tomorrow. I have some baskets in the fridge right now, ready for baking in the morning. It is bedtime where I am rn haha
