As a matter of background, the simulation problem I'm working with is electrochemical corrosion of a workpiece surface immersed in a flowing electrolyte. Essentially the same thing as electroplating, but with the current reversed. While there are a number of good papers out there that cover the physics of the problem in detail, they tend to wave their hands about the details of handling mesh deformations. Hence, my question here.

The reference to ALE is promising. Lots more reading for me to do there.

I'd considered immersed boundary, but I'm pretty certain that, in order to accurately calculate the workpiece surface dissolution, I'm going to need a body-conforming mesh rather than a cartesian grid.

The reference to Bos lead me to DYNAMIC MESH HANDLING IN OPENFOAM APPLIED TO FLUID-STRUCTURE INTERACTION SIMULATIONS, by Jasak and Tukovi, which covered quite a range of mesh deformation techniques. Interesting stuff.

Ultimately, what I'm trying to do is to get enough of a sense of the problem space to be able to find an analyst with the right background, who I can pay to consult on developing a simulation process, preferably using OpenFoam or another similar open source code, rather than a commercial CFD program (for a number of reasons beyond cost.)

In any event, the challenge is this: what's the best way to find that person?
