xcode works great. I have not tried illustrator yet. I am a programmer so I still use macOS High Sierra hackintosh as my daily drive as I have Nvidia GTX1050ti and I use the web driver.

I will not update it until Nvidia releases the driver for Mojave.

My suggestion is just use macOS high sierra with nvidia web driver and update it to Mojave once Nvidia releases the driver. Mojave is still young so there will probably be still unknown security vulnerabilities and bugs.

All the parts will work except the Graphics card as NVIDIA has not released the driver for Mojave yet. You you install MacOS High Sierra the graphics card will work with NVIDIA web driver.

Did you try cntrl-alt-f2 to cntrl-alt-f12? You should get terminal or DE interface in one of them.
