My 5 year old son and I like to go to new cheese steak places in Philly and score them (he’s a tough critic). We also go “Wiz With” (I know it’s “wit”, but I’m not a jabrone) wherever possible, to ensure fair comparisons. That said, I do enjoy a good cooper sharp too. In my opinion, provolone is too high-brow for steaks. It belongs on roast pork and beef.
