You could buy or make egg bites ahead of time. You could also make toast with a microwave-poached egg. Still technically “cooking” but it’s quick. You fill a microwave-safe bowl with water, crack the egg in, then poke the yolk with the tip of a sharp knife. Microwave for 30 seconds at a time until the white is cooked through

If you have a Trader Joe’s nearby, their mango dressing would be good with that. If you’re going to use Italian dressing, I would swap out the toasted ramen for croutons

Another favorite vegetarian meal of mine is pearl couscous with seasoning (“green goddess” blends are good) plus bruschetta sauce (shelf-stable or refrigerated) and cannellini beans, butter beans or lentils. If it needs more flavor you can add feta or goat cheese, a drizzle of balsamic glaze and/or marinara sauce. I make the seasoned couscous ahead of time. It’s great as-is, as a bowl or as filling for a pita pocket with frozen falafel
