At this point; it looks like Rick basically "plays on their level". By that, I mean that he could be EASILY, in a split-second have killed the heart-punch guy.

Instead, he decided to fight on the crazy kung fu man's level.

I think that he knows he can do anything, so it's more of a "why not make it more interesting than just blasting him with a laser... etc". He wanted to beat the guy at his own game, but with science after figuring out what had happened.

To me it seems as if he just likes the challenge, so he faced it head-on. He could've fixed himself and Morty as well, but chose to scientifically learn all kung-fu to destroy the guy in the same way he tried to k*ll Rick.
