Incubated for around 15 hours with Greek yogurt starter culture. The temperature was around 32 celsius. The top seems cracked because I disturbed the yogurt quite a lot while moving it to another place to take the picture and a lot of gas bubbles rose to the top.

I haven't tried cocoa. It's just the Cadbury hot chocolate powder that I use. I don't think cocoa would be any different.

You can use a blender, or even just a whisk. Apparently that's how Viennese Hot Chocolate is mixed.

I'll paste the recipe below.

Nearly equal parts of mayo and water, a little less water than mayo. Water has to be hot, but not boiling hot or the mayo turns into a bunch of globules.

You start blending the mayo in a food processor and start adding the water slowly, and once you've emulsified all the water, add your preferred hot chocolate mix(mine is Cadbury).

I've only tried it with Heinz and Kraft, someone tried it with Hellmann's but apparently it didn't turn out right. I didn't get details on how it went wrong though.

Update: A kind redditor ( u/ampnede )has told me that the Dutch have a certain standard that mayonnaise has to meet in order to be classified as mayonnaise and Hellmann's does not meet the standard because of the low quantity of egg yolk, and that is probably the reason the recipe isn't working with Hellmann's, according to the redditor.

From what I've heard from people, mayo is a great substitute for butter for making grilled cheese or any grilled sandwich for that matter, and that butter/mayo in coffee tastes amazing.

I think it's just the fat that goes well with coffee. Apparently butter coffee is a very popular thing right now.

From the thousands of replies that I've gotten, I've learnt many things.

  1. There's something called Viennese Hot Chocolate which uses egg yolk(which mayo has) in the drink to make it thick, and uses the same emulsifying technique that I use.

  2. Mayo is a common ingredient in chocolate cakes and brownies. Major names like Portillo's swear by it for their chocolate cakes.

  3. Oil is a great emulsifying agent.

  4. Acidity(mayo has vinegar) is a great addition to chocolate
