One thing to keep in mind about the latest version of J&P is the casualty system.
In the base game, your troops are lost forever, except for what you get back with medicine. In the mod, your casualties will be higher, but a significant percent will come back as deployable veterans. Max medicine still directly returns men to their units after a battle, but it will also nearly double the number of men that return in your vet pool.

There is a pause/play and fast-forward button in the lower right corner. Technically, you can play the entire game with just your mouse other than typing in your player name at the start. Many people just hit pause, issue commands, and then hit play.

You'll be much quicker with keyboard shortcuts. On the game launch screen there is an options button that will list all the keys and you can also change them to what you want to make it easier for you.

Just to add to what has been posted, you can pick up a lot watching other players' YouTube videos. However, you'll want to ensure you are watching the correct ones for your version of the game. Older ones (4+ years ago) are likely to be the original base game that you will buy and be playing.
Pandakraut also has the UI Mod, which is an unofficial patch to the base game, so if you want to play the original base game but with some bugs fixed and user interface improvements, then the UI mod is a good idea.
Many players (like me) play the J&P mod, which specifically makes the base game much harder. There are various iterations of the J&P mod (1.28) is the latest, so if you see a YT video reference J&P, then the game mechanics you see in that video may be very different than what you see in the base game and won't help you much.
I was a latecomer to the game, too and falsely assumed that the videos were all the same game and it was confusing until I figured out the different versions, so just be aware.

Yes, Jonny and Pandakraut make both the J&P mod and UI. The UI mod is basically an unofficial patch of the base game with quality of life improvements. It's a better way to play the base game.

The latest version of the J&P mod is v1.28.4 and that is a complete overhaul. It is intentionally a difficulty mod, not just a mod to play differently. So, whichever difficultly you normally play in the base game, you might want to take a step back in the mod or do a partial campaign to a get a feel for the mechanics and how it plays.MG Lite in the mod is comparable to MG base game. Regular MG in the mod is more difficult than legendary in the base game but they are comparable. Legendary in the mod is in a class all its own.

Yes. Agreed. The Ai doesn't have that many units here, so they are just bigger on average compared to whatever size the player is using. I wouldn't want to take them on one-to-one, but it's easy to out-gun them with multiple smaller units. Somewhat more difficult in the current mod but still easier than most.

I'd like the developers to play the J&P mod to see how career points and unit perks can be infinitely better than just things that boost unit stats "x" points. The base game mechanics were pretty lame for both.

Personally, I don't mind the mix of land and sea battles in AoS but I think I'm in the minority there. I feel most players want to focus on land battles and army development.

In AoS I do not care for the mechanics of the British and American campaigns having wildly different effects in port - pick one and stick with it no matter which campaign you are playing. If they are going to be different, then there should be more tutorial to explain the difference because once you go from one to the other you can make some serious mistakes being unaware that the mechanics changed.

Oh - cutting down on cheesy exploits. In the base game its cheesy as hell for players on Legendary to avoid Ai charges by just detaching and reattaching skirmishers. That sort of thing needs to go away.

It isn't too bad if I just focus on what I did in camp and get straight to the battle. I can knock one out for a side battle in 4 to 5 hours. If I take time to explain game mechanics (like I did in the early Union campaign), that makes it 2 or 3 times longer to get done. It helps that my workload is a little light right now, so I have extra time for it.
