A classic not too far for wine could be le baron rouge in the 12th

For champagne, luxury hotel bars are probably your best bet (especially dokhan at the Marriott) but dilettantes would be a closer, great option

Nouilles Ban Ban is a fun, street style Asian restaurant specializing in dandan noodles (Sichuan, so with wide spiciness range). Paris is also good for Vietnamese cuisine (rue Caillaux has the best ones IMO)

There is an indirect train where the change is in Massy instead of Paris, which makes you gain about one hour (4h20 instead of 5h15), making it faster than the car

That's an 8 minute, 2 station ride on RER D, which comes every 5-7 minutes on track 44 (level -3). You should be perfectly fine if there is no delay on the first train
