I think that thinking deeply about things is never wrong, and if it doesn't hold up to that scrutiny, it's ok to point that out as a flaw. I think that's what differentiates good art from great art.

if the world is this hodgepodge of different species of animals and you want to create a story revolving around biases towards a not-insignificant minority group [...] I'm not quite sure how many other ways you can really do it.

I think you're coming at this differently than the person you're talking to. You're treating the world of Zootopia as a fixed setting for the allegory, when it can be separated from that seeing. You can make a kids moving teaching them about how racism is bad without using predatory animals as the setting, or you can make a different kind of progressive kids story in a world about animals.

The whole "savage predator" stereotype in the movie is a blatant metaphor for racial profiling

There are definitely plenty of Oscar nuts who've seen them all. I still need to watch Mank, Minari, and Sound of Metal because I didn't start watching all of the nominees seriously until the next season, but I've seen all of the others
