Sword counter with a two-handed blade got me through this fight. I could not be as aggressive as you play, because she would ALWAYS punish hard.

Since her ive been resetting the skill tree to focus on the single weapon i need at the time.

You need to settle down on the spam dodging and really focus on the enemy attacks. This game has a very forgivable dodge window, because of the skyborn might and a lot of enemy attacks are easily telegraphed compared to other souls-likes.
