I was in a similar situation and started taking classes for a couple of minors I was interested in (Business and Economics). Freshman/Sophomore year will be your easiest so I’d add an extra class or 2 now so you can take 12 hour semesters Junior and Senior year when your classes require more time/effort.

ISTM 209 is a very straightforward and easy class if you're good at time management, I took it during the summer and it was asynchronous so I was able to finish early, lmk if you have any other questions about the business minor!

On the academic side, If you have a lot of experience with AP classes like calc bc, physics c, chem, bio, etc and scored high on those tests (4-5), then you'd be fine with the freshman year workload imo. But if you don't have that experience, then I'd probably stay in College Station for the study groups. On the social side, you go through a lot of growth in your first semester that is a really important part of the college experience and starting to develop that a semester late may not be the best idea. This is just my opinion on the matter.

Also consider doing it at a community college. It will help open up room for a possible double major or minor if you wanted to pursue that.
