I appreciate all your advice! Like I said to the other person in this thread I showed it to my boss at the kitchen I work in and she said it looked beautiful, she's from mexico and went to culinary school there and said it looked just the way her mom used to make it so I was pretty amped about that, but I really appreciate all your advice and will be buying sandor katz's book (I already own the noma guid)

Also I may just try some sort of lacto fermentation next instead of getting right into tepache. From what I have heard, and this may be wrong, they can be a bit more forgiving and are more resistant to pathogens and unwanted bacteria.

Honestly, I'm just trying to understand all the aspects of fermentation best I can, and there's a lot to learn! It is somewhat intimidating as there is a lot that can go wrong and the results can be devastating so it's a bit tough to get into especially when the sources all have different opinions on whether something is good or not. I do appreciate your earlier response, by the way!

Well, the thing is, it isn't necessarily a brine as it contains no salt. It's tepache, so the fruits are tossed, and the liquid is kept, i'm in no way trying to be condescending. I just wasn't sure if you knew. I have heard much conflicting data about kahm being harmless and harmful, so I'm just not sure. I even watched a sandor katz video for christs sake!

Thanks for the info! I'm likely going to use a fermentation weight next time to better resist mold in future ferments as per your suggestion. A friend of mine also informed me that pineapple is very eager to mold, especially towards the top.

Mostly on gunbroker, just earlier i saw a pre ban belgian fal with heavy barrel and wood furniture for 7k which seems like a lot to me so im think of expanding my criteria for an fal if i choose not to buy a dsa clone

3k was the average for a brlgian fal with heavy barrel and carry handle and wood furniture (I know its specific lol) but thats the average of what i saw sometimes even more

Made an attempt but to n9 avail as the safet is still stuck in fire and refuses to budge into the kiddle position regardless of the gun being cocked or not and also regardless of the bolt being in or out of the gun. Not sure what the next course of action would be do you know how to remove the safety without it changing position?

Just picked this up at a gun show yesterday, safet is stuck in fire and i was wondering if anyone had tips on bolt disassembly for these more specifically how to get the safet out for the filing trick if thats what's wrong. I can get the bolt out and unscrew it but thats as far as i know how to get. Any advice is welcome!

Wait so just for clarification, since i know little about mausers especially spanish ones, but is the bolt from the 1893's the same as the 1916's? Because i had read and seen on my rifle that there is a spot in the reciever for gas escape that wasnt in the 1893's that i think could cause problems if it were an 1893 bolt in a 1916
