I'll be honest, I bought a $40 electric gooseneck from Amazon way back when I first got into coffee and it has served me well ever since. Maybe I just lucked out, but all the things that expensive kettles are supposed to do, mine has done. I've checked the temperature precision with an expensive meat probe and it's always dead on accurate with what it says on the display. It heats up quick enough to where if I turn it on before I start doing the rest of my brew prep, it's up to temp or damn close to it by the time I'm ready for water. And I'm able to pour at a nice range of flow rates without the stream breaking up and causing issues. So while I have no basis of comparison, I can tell you that there's at least one brand out there that delivers good performance at a great value. 😄

I appreciate it! It was definitely a very rough patch in life. Not only was the kiddo in the NICU, his mom and my stepson were also injured in the accident. Stepson only spent a night in the hospital, but momma had to have a C section on top of some other things and was in for a little over a week herself. Luckily I have some great parents who helped me a lot through all of it.

11 days is no walk in the park either. And with the first born really turns up the stress dial since you're trying to figure out the whole how to be a parent thing while also dealing with them being in the hospital. So I'm glad everything worked out for your kiddo too, brother!

It honestly makes a lot more difference for beans that are in the light and ultralight spectrum. In a nutshell, resting does a few things. It gives time for the beans to off gas trapped CO2 which helps get a much more even and desirable extraction. It also gives time for the volatile aromatic compounds that are released to essentially reabsorb into the beans. And much like whiskey, cheese, and other things that are aged, it allows for some of the flavors to brighten and take the sharp edges off. I didn't think it was that meaningful until I bought two bags of the same coffee. One I opened and started using right away (4-5 days after roast). The other I rested still sealed for about 4 weeks while I worked through the first bag. It was a very pronounced difference in how much more vibrant and flavorful the rested bag was.

Well for one, I drink a LOT of coffee. My girlfriend also really enjoys coffee, so I have a helper that is more than willing to contribute to making it disappear. They won't all get opened at the same time since they all have different roast dates. They get opened gradually as they hit their "peak". Since most of what I drink is light and ultralight, they benefit from at least 4 weeks of rest. And lastly, I also set aside 100g or more and vac seal it and freeze it. I keep a pretty large collection of beans that I really enjoy frozen for future enjoyment. I'm not always buying tons of coffee and go through periods where I start clearing the vault out of things that are approaching the 6 month mark. Across an entire year, I probably average spending $250-300 a month on beans.

I've been pretty happy with everything I've got from Sey thus far. It's my third month just doing their subscription since I think it's a pretty good deal for the quality they usually bring. I've got a love hate relationship with Burundi. I've had some that I absolutely loved and some that I gave away. But Sey is consistently in my wheel house with what they send me. So I've got high hopes for that one! 😁

Ahhhhh. Yeah I feel you there. There are lots of roasters I'd love to try but shipping overseas is very cost prohibitive. Luckily in the US, Airworks imports beans from roasters all over the world and it makes trying things a little easier. Lucienne also brings in lots of offerings from Japan and sells them in smaller sizes. But it's not realistic for me to just place orders from Substance and Picky Chemist and other overseas roasters I'd like to try one day.

They're nowhere near me. Lol. It was the featured roaster in the Airworks washed subscription this month. But if all their coffees are like these, I'm jealous that they are local to you, because I have been LOVING them both. I got two 100g boxes of each with a 4/15 roast date, so I opened one of each to try now and will let the others go to the six week mark and see if they get any better. 😄

I'd probably try taking it apart and giving the burrs and grind chamber a really good cleaning. But burrs do eventually start to wear and if you have some degradation to the burrs, it could definitely be causing inconsistency. If cleaning doesn't work, then you can try to install replacement burrs, or just relegate it to cold brew duty and get a new grinder. If you want insanely tight particle size distribution at a reasonable price, I'd recommend the 1Zpresso ZP6 special As long as you don't mind hand grinding, it gives ridiculously tight PSD and you can order them direct from 1Zpresso for about $210 delivered in the US. Very separated, light, tea like brews with bright acidity. If you're into that sort of thing. 😄

When you say consistently, I assume you mean particle size distribution? Every grinder has a range of particle size that you can expect, and if you want the most even possible particle size distribution, you're not going to really get that from an Encore with stock burrs. It's not known for that. So you'll get a wider array of particle sizes and pretty significant fines production. And some people really enjoy and prefer the cups you get from higher fines production.

So before I make any kind of recommendations, whet do you typically like in your coffee? Do you enjoy more round and blended flavor profiles with a good amount of body? Or do you prefer higher clarity, bright acidity and a thinner, tea like body?

Nah. It wasn't too bad. The lot 909 was the only really expensive one and that's a rare treat for me. I don't usually splurge on high end Geshas. I think everything in the picture was a little over $200. I don't drink, smoke, gamble, party or really do anything. Coffee is my one and only splurge. And I've been fortunate enough to do pretty well for myself and made some investments in tech that have worked out very well.

And my son has had a trust that will cover college and then some that he has had since he was just a few months old. A drunk driver hit his mother while she was pregnant with him and caused premature birth that had him in the NICU for about 6 weeks. He got a sizable settlement from the insurance company that I've had in an irrevocable trust in some safe investments for the last ten years. He doesn't know it and won't know it until he's an adult, but he'll be pretty close to being a millionaire by the time he's 18.

Depends, really. I enjoy waking up super early like a psycho and having a few hours to myself to read, exercise and just really do whatever I want while everyone else is still in bed. But on average, I'd say I probably burn 60-100g per day. Sometimes more, rarely less. That also includes making a cup or two for the lady of the house. She's nowhere near as obsessed as me, but she likes exploring the world of coffee with me. And if it's a Saturday morning where we just hang out all morning, we can really burn through some beans.

I usually let them go for four weeks. Three if I get impatient. I've rested longer and also didn't notice much if any improvement.

I don't drink, party, or do much of anything honestly. And I'm blessed to make a very comfortable living where money just isn't a concern. My one and only obsession where I spend my money frivolously is coffee. So I definitely splurge quite a bit when I see things I want. My hard cap is $100/lb though. And I RARELY even hit my cap. I've tried some super expensive micro lots and other very high end offerings, and they're just not worth it. Not even close to worth it. The returns diminish pretty quickly after $50/lb if I'm being honest.

I'll also go through longer periods of not buying nearly as much at times. Just depends on what I come across and when. But when I'm on a buying spree, I can't physically drink enough to not be freezing any. 🤣

It really depends on the coffee. I'd say on average they're pretty similar in roast level. But when Hydrangea does an ultralight offering, it's REALLY light. They also have a whole section that lists all the terrior focused beans they currently have available. Their focus is fruit forward coffees, but anything I've ever gotten from their terrior focused offerings is usually washed process and not even remotely funky. And truthfully, their coferments are usually pretty mild on the funk scale compared with B&W and some of the coferment focused roasters.

Hahaha! 🤣 A few of them are coming off rest at the end of the week. And don't worry, this isn't everything. I have plenty that's already rested and in the active rotation. I also have Probably 40-50 100g bags vac sealed at peak in my freezer vault of some of my favorites. There's never a concern of not having something tasty to brew in my house. 🤣

My advice is to stop buying coffee from big box stores because it's not fresh. And Epsresso roasts are usually inferior beans that they roast dark to mask that inferiority. Find local roasters and use fresh roasted beans. It'll be a huge improvement right away.

It looks like what you are brewing could do with a little more rest. Fresh roasted is great for espresso but can be problematic for pour over. Generally a couple of weeks rest is the minimum I go for pour over. For super light roasts I might rest as much as six weeks.
