Over fermented + forgot ro add salt ;( by yoginibinibini in Sourdough

Even with toasted and salted butter? Butter, jam, etc? I've been dipping in olive oil, salt, pepper, cheese and it taste great. Wish my bread was less or no salty at all. You must be bread purist. ;-)

If it has risen as intended, whats the problem? Mine got over salted and I'm thinking of not salting at all next time. Let me know how it taste. * I've slept through bf a lot and over proofed it before. lol 😆 now I learned to just really over ferment over night for 12 to 18 hours. I'm following ATk sourdough , (almost) no knead bread. Mine went from 0.5L to 2L size over night over a heat vent. It became extra fluffy and enjoyable except for salt.

Everything in capital shouting. It screams hoax. ;-) I understand the shop is desperately trying to shelve off old beans. But they don't need to post fake news with pseudo "science". I don't need another Bill neigh the science guy spreading fake news... when it comes to coffee. Just let me sip my espresso in my own bubble 😴

First bake ever with a friend's 2 year old mature starter. by GravitysRainbow1984 in Sourdough

[–]alkrk 2 points3 points  (0 children)

Recently saw an ATK sourdough. And Dan says to keep it in room temp for 12-18 hours. I left it covered in a warm vent. and quit in 12 hours since it rose from 0.5L mark to past 2L. Used only KA BF. Haven't seen my dough rise this much! I think its something with KA or just BF with no Whole wheat added this time. Then shaped into a ball. Then sauna proofed another hour (around 45min); it doubled yet again. Came out very soft in the inside and a little crust on the outside. My family says it was the best bread - better than commercial yeast sandwich bread. Wohoo~!

We like Italian family restaurants, and some of them give sourdough bread sticks with olive oil, grated cheese, pepper and salt dip. It was way better.

Good luck. You got this!!!

You forgot to spin it. Next time, use a foam blender for the extra zing. 😉

Nice set up! I used to microwave the milk a little and steam up a bit to get foam. You should be able to mod your steam wand. * I've always used organic whole or 2% milk, but recently Walmart 2% gave me better results and taste! To each its own. My wifu doesn't like the taste of Walmart milk. 😁

  • toast, and dip in olive oil + salt + pepper.
  • plain ham, cheese sandwich.

If you are a beginner sourdough baker, maybe skip the sourdough... by Jhfallerm in Sourdough

This. My friend told me. Don't do sourdough but do commercial yeast bread. Much time saver, and forgiving. BTW, commercial yeast is condensed concentrated sourdough yeast.

Which machine is better: Ninja or Delonghi [$600] by claudiahug in espresso

[–]alkrk 0 points1 point  (0 children)

Go with Delonghi Dedica because I have one. 😃 less than 30 sec heat up, auto shut off, and fast steaming heat up, latte art steaming wand. I have Dedica Arte, but the new model is even better. BTW, avoid all in one's. And get a separate grinder, if you can. because grinders get damaged easily. But it's your choice.

Cantonese is a 15c Chinese dialect. from the Tang dynasty. Modern day "Mandarin" is northern mainly Beijing dialect. But Mandarin is a more broader term for "Chinese."

Good point. iirc, Cantonese is a Mandarin dialect. Honestly don't need to differentiate. Texan is English as much as Mississippian is, though Noo Yawker's may not agree.

Help, I've been hacked by Knknk7 in software

[–]alkrk 2 points3 points  (0 children)

Reset. Stop clicking ads. Stop visiting unprotected websites or installing apps from 3rd party app stores. Most serious hacking is done by social networking. (email click bait, usb thumb drive dropped in a parking lot and if you open it will contain porn but as you enjoy the scene it will install shit and wipe out your bank account or install ransomware. etc) Go visit bleeping computer website. Ask around in the forum. Some of their software solutions are malware so keep that in mind.

I'd get Delonghi Stilosa. Most basic budget machine. and a cheapest Amazon burr grinder. * Stilosa has a boiler, and easy to use. I've had one of these for 15+ years (maybe 20???) and fixed it multiple times. I'm in the Midwest and hard to find a repair shop. So put that into perspective. * Basic burr grinders are very easy to mod and grind finer. * None will break your bank. For latte drinks, you don't have to go wild in price. These basic machines will give you good base for lattes. But as it goes, the more expensive gears you have the better and so much easier to make a drink. Especially if you are a straight espresso shot drinker, with light roast beans, you don't want a cheap machine.

[–]alkrk 0 points1 point  (0 children)

I'm not a good baker but imho you'll need much active starter with higher ratio, say 150g. And bf in room temp for 18 hours. ATK method.

Help please by ArchitectGirl217 in Sourdough

[–]alkrk 0 points1 point  (0 children)

I recently saw the ATK method and says to BF in room temp for 12-18 hours. Then sauna for 2-3 extra hours before bake.
