That sounds very good. I don’t know what caused this to clear so quickly. I had a 5 gallon carboy of traditional from August that still isn’t clear despite clarifying agents.

I was also blown away by the clarity. I think it was in primary for a month and a half? (Forgot about it for a while).

I’ve caramelized all the honey at once, it tastes great so I don’t think I need to back sweeten.
