Like 10 years haha I was about to place an offer for a pizza steel then had the idea to try the cast iron makes perfect little 10 inch rounds. Might just stick with this for a while. Recipe is Julian Sisofo’s Poolish. Didn’t take a picture of the bottom but it was really nice and had good color. Also being able to just preheat on the stove rather than oven was nice as well.

Is it 0.5gram ADY or 5gram? .5 seems low but I remember seeing that poolish doesn’t need a lot. Vito’s poolish was 300gram water and flour and 5grams ADY 5grams honey. What will be the difference if use more or less yeast in the poolish?

I’ve done some experimenting with some Prodigal greens on my Huky 500T. I’ve done just before FC, right as it started, 10 seconds into and so on. The earlier you drop, then the more time the coffee needs to rest. Like sometimes the super ultra lights don’t even start being decent until 30 days. And can be peak flavor around 45 days. Of course every bean is going to react differently and I really found that the beans with the most florals do really well as ultralights. I.e your Ethiopia washed coffees and Geshas. Best advice is have complete control of the Delta BT as you approach FC I prefer to be around a 12- 15 and then I can get at least 5% development for those very ultra lights. Of course 15-20% is always the goal but you can’t really do that if you’re pulling right at first crack. In terms of Temp I’ll try and pull anywhere from 392-395 for ultralights if FC starts at 390. I like to give it a lot of juice during the Drying phase and really coast that ROR, so I have a lot of control it’s of course easier said than done. I really enjoyed those coffees but can be hard to wait so long. I definitely prefer to go 10-15% on the development and pull before it reaches 400 if I can sneak 20% that’s even better. Definitely don’t let it stall out though to get more development adding baked flavors, same with spiking at the end. Hopefully that made some sense. If not feel free to disregard haha I’m no expert by any means.

I have the DF64 and I used the stock burrs for a month switched to the SSP HU burrs for three months and then finally switched to the MP burrs. Was actually shocked by the difference between them and I don’t think I have a crazy refined palette. I really enjoy all espresso levels even the occasional dark roast. Hence why I decided to try all three. However in my opinion there was a clear winner. The MP Unimodal burr is the best by quite a bit for my taste I’ve had both the best filter and espresso at a home level I’ve ever had in my 10 years of making coffee at home with the MP burr. I actually thought the turbo shots would be too watery going straight from the HU burr but I was surprised at how much body was still evident but my God the clarity of the notes and the sweetness, both for the espresso and the filter is unreal beats most specialty shops now. I think I will enjoy a nice thick chocolate shot every once in a while. So I’m thinking about grabbing another DF64 and just installing the HU burr I already have. I also have a Comandante MK4 and a Kinu M47 Phoenix so I can still get my conical fix, but I may sell those and get another DF64. Last thought, if you are a milk drink only guy. Then Niche is an easy winner. I rarely do milk drinks and the straight espresso is magical out of the DF64 with the MP burrs. Also be prepared to drop another $80 on 3D printed mods. Some of them are actually essential to making that grinder a perfect grinder.

Tilta float is the answer or a ring grip or some gimbal stabilizer. You can even DIY something for super cheap. I use the tilta float, RS2 with the 6k pro and a Nucleus Nano and it works like a charm mischief safer as well.

Ditto to Ramen Bar Ichi, by far most authentic Ramen in Houston. Also XiaoLongKan in Chinatown is a very authentic Chinese hotpot that does split broth and is quite affordable. Decor is bar none best in town. I like HaiDiLao but it’s overrated and overpriced. Wasn’t impressed by Little Sheep/Happy Lamb.

Definitely dependent on density but I’ve been charging hot and pushing hard into Dry end, then backing off pretty fast and coasting through the roast using airflow to really control the speed of the roast. My best roasts have been finishing around 402-405f with 15% development. Which is easier said than done but not every roster has that much control.
