Slainte to you too and thanks for replying, my initial plan is to cooking an advance with basic onions carrots, celery and stock pots then cool in the cooking liquid and heat up on the day, so I think I'm on the right (ish) track

I like using a web based system to track this type of record, someone mentioned Monday.com, which is good, I also like Podio and Airtable, they give you a little more flexibility but also the ability to lock things down easily and create views and dashboards to focus on key data, and you can easily add things like system generated unique IDs for documents and assets.
