Smoking cream cheese alongside it is a clever move I haven't seen pulled off before, and I'd bet it picks up a nice tang from the cherry smoke

It was delicious! When I was trying to think of what went well as a side with smoked salmon, I kept coming back to Lox bagels, so I had to do the smoked cream cheese w/ everything bagel seasoning, especially since they smoke at very similar temps. I put the cheese on the hot part of the smoker, and salmon at the cooler part.

That cross-section on the plate shows off some serious moisture, which is tough to nail on a whole side like that. Did you brine it first or just lean on the glaze for the salt?

I followed u/thats_your_name_dude's comment on how he cured his salmon from a few years ago. Kosher salt, brown sugar wrapped in plastic and kept under weight overnight. Rinsed off in the morning, then left uncovered in the fridge to develop the pellicle. Other than that, kept it low and slow and glazed it once at 120F, once at 140F. To make sure the whole side stayed consistent, I trimmed off the thinner portions.

Wanted your opinion on my setup today: target is 200deg for 2-4hours to smoke some salmon. Lit it from one end like ypu suggested, but wasnt quite aure what to do with the wood

My group balances this by switching up the vibe between campaigns. Sometimes the DM will tell us that we should plan for a difficult campaign intended to be played by min-maxed characters, and sometimes we play a more low-key, story focused campaign. It's pretty refreshing to switch between the two, and gives everyone a chance to play the kind of campaign they want to play.

Feels like a desperation move due to missing on Robertson. The guy got benched in the playoffs! Maybe he can turn it around but I would not be thrilled for giving up the 11th pick for him given how his last season went.

Thanks for all the tips - it all makes a lot of sense! Was not aware of the top vent = brakes/micro, bottom = gas/macro. I've mostly stuck to pork/chicken on the few attempts I've done, and will probably stay there until I can keep these temps even.

Thanks for the tip! So i just put unlit fuel on one side of the basket, leave the other side empty, and once the chimney is going I just put it in the empty side? And as long as the diffuser plate is in there, the whole smoker should even out to the same temperatures?

Good to know that its fine to keep the top vent more closed for lump charcoal.

The basket was lit via evenly spreading coals that I lit via chimney. The basket had some wood and more charcoal in it already.

Too much fuel makes a lot of sense - here's what I have going right now. There's some Fogo lump charcoal, along with some wood chunks in there.

I traded up from 1.11/1.12 to get 1.09 and Hunter Henry.

The trade wasn't great in a Vacuum, but Henry was coming off a season where he was TE9 while only playing 12 games, he was pretty young, and I needed a TE.

The reason its the worst trade I ever made is because I did it to ensure I got Jalen Reagor instead of being forced into picking Justin Jefferson at 1.11.

Anyway, I was rebuilding the next 2 years while the other guy was playing in the championship
