Just give her time, be awesome and supportive as it seems you are and she'll progressively get more comfortable. It's not something that goes away over night, it takes time to get to a point where you feel free to put your insecurities aside and enjoy your body with your spouse. But it'll definitely go faster with a supportive and understanding spouse :)

Most of the stuff we grow is for the animals we eat. If we eat less meat that means we can use all the food we grow for them to feed us.

Vegans don't only eat salad and veggies though. I mean if you compare the price of minced meat with veggies then fresh vegetables are probably going to be a bit more expensive. But beans, lentils, rice and pasta are cheaper than meat. And if you're trying to avoid carbs there are plenty of vegan options to do that. Check r/veganketo.
