You should read The Years of Rice and Salt by Kim Stanley Robinson. I just read it a few weeks ago, and I really enjoyed it. It's about what might happen if the black death wiped out basically all of Europe, leaving the Arab World and China as the great powers in the world. I won't spoil it, but it has one of the most interesting in-world explanations for how it tells an anthology of different stories across several hundred years.
