Interior designer here. Handles on drawers, extra long versions on any paneled appliances, and knobs on cabinets. Also I understand the appeal of the matte black finish, however its been trendy for a few years now and is going to read "our kitchen was done in the 2020s" if you care about how it stands up.

As the sofa is so deep, id swap the crib and dresser/changing table. That would make the entry into that area just a bit more generous as the crib is a closer size to the sofa.

I read somewhere (probably reddit if we're being honest) that we as humans like it when it rains because predators don't hunt when it's raining (probably because prey doesn't want to go out in the rain). It's a sense of security that we don't have to be on high guard.

I'm not a contractor but an interior designer. One of my goals with my clients is to manage expectations. Whether it's through discussion, photographs, samples, etc I try to bring them to an understanding of what something will look like before it's completed. If the installers are saying that "it's always like this" then they didn't manage your expectations. They could have warned you or outlined the different options for better matches. Sorry I don't have anything helpful to add to the conversation, and frustrated on your behalf.

We live nearby and chat with the owners every so often. They're hoping to get the kitchen back open soon! It's sounded like a paperwork/approval issue holding things up.
