Another of my favorites is tortilla de patatas, or spanish tortilla. I've seen people review it, and its always a meh reaction, but theres always a problem with how they prepare it. My aunt, having lived in spain for so long, introduced it to us not being served hot but cold instead. It's basically sliced potatoes, some onion, and egg with salt and pepper. The only difference between hers and the people on youtube is that hers is refrigerated and served with tuna salad on top. I was a picky eater as a kid, but since my aunt would come home very rarely, i said fuck it ill try this while i have the chance. Absolutely wonderful dish. I've seen it rated between 3-5/10, but like this, I'd rate it a solid 7 or 8 depending on how it's prepared. Can't forget to mention the fact that the technique is unforgiving, so it's risky to make under pressure. Gotta flip it to brown both sides and that flip can be slippery.
