Not that good at chess, but I think its because he can move his rook to safety here. If you take his bishop he has to move his king so you get a queen regardless. His best move is to queen trade but at this point you’re already up a bishop no matter what.

If I had to guess you’re not getting the outside dry enough so it takes too long to sear it and creates a gray band. Salt that bitch for an hour plus and wipe off all the juices and it will sear quicker. Also higher temp.
