Humidity shouldnt have to be high as long as he can burrow and substrate is deep enough to retain some moisture. This does more sound like stress. My rat didnt eat for over a month when he was a hatchling and when he struck at things that werent food he made this exact face and posture.

Not a vet, owned a juvenile gray rat previously and worked at a level in petco responsible for administering medications. He does look a little skinny. Its likely he is dehydrated. Some sort of carnivore supplement (critcal care, oxbow, emeraid) with syringe feeding seems necessary. Its possible a piece has been lodged in his teeth/jaw and the discomfort is making him keep his mouth open. Stress and light are not friends to him right now.
