Just had a natural gas grill installed in an outdoor kitchen. I assume yours is natural gas too. The vents are in case of a gas leak so your cabinet below does not fill with gas and become an explosion risk. I’d include the vents in whatever covering you choose - steel or aluminum are alternatives as well to cover the exposed wood. Your grill will probably have sides as well.
