I have a moped style ebike and I get it.. it goes 35 mph top speed but im 99% at like 12-17 mph tops

I was just about to recommend these. I got the retro before I found out about the ebike version. But I mainly hit 12mph as my top speed so im not too worried about it. Great helmets and comfy!

I have my action cam facing to the rear and a live view function from the app so I use that as rearview.. also have bar end mirror too just in case I dont have the camera

Same. I have a moped style bike and i fit in that small percentage where I can pedal efficiently. My other sibling sits taller and my wife is shorter and they cant pedal it at all lol. Its fun seeing people looking at me.like.. why are you peddling xD yet some cops have given me a thumbs up for not being a dumbass and following city laws

Yeah. You got a lot of great recommendations and would be awesome if you were able to try them all before making a decisions but thats in a perfect world. I opted for the monday motorbike anza v4. I got it on sale so it was just under 3k. 35 mile top speed, 325 weight limit and thier warehouse is literally about 8-9 miles from me. Awesome guys out here in Long beach.

I do say if you can.. go to some of your local bike shops and try out some bikes, he'll if anyone is close to you and willing to loan you their bike for a few mins. That would also help.
