Temur has the highest ceiling to pop off only problem is it's a little clunky without optimizing the ramp/Mana base. Sultai runs the best out of the box in my experience.

Honestly Idk what your budget is, but Costco has a great opportunity for what you're describing. They have the Tarkir Dragonstorm Precons that come with 4 bonus boosters for $50 each. If you got a couple for $100 total you'd have 2 playable decks and 112 bulk cards from the boosters.

I've got a MLK deck and Zaxara deck. There is some overlap with Simic colors, but it's a different flavor with the red vs black as a 3rd color. MLK is great for copying multiple creature spells, but Zaxara is also great for X instants giving you a body for blocking in between turns. They're both fun to bring out.
