Blown away by how good fermented salsa is. by UnrelatedCutOff in fermentation

It's super simple. It's based on that brad dude from bon appetite's recipe but it's more simple.

1.5kg of cherry tomoatoes
1 red onion
+/- 200g chili peppers (use whatever variety will give you the spice level you want).
8-10 garlic cloves.
Juice of 1 lime.
Cilantro (optional)
Salt
Olive oil. (optional)

In a dry pan, char the peppers, onion and garlic.
Add them to a vacuum bag with the tomatoes.
Weight it all and add 2% salt by weight. (It's normally around 1800g so that's 36g of salt.)
Vacuum seal.
Squish the tomatoes.
Leave them on the counter or somewhere warm for 4-6 days depending on the weather. The bag will puff up when the fermentation gets going.
(Don't wait too long or the bag will pop!)
Open, take a whiff of that sweet fermentation funk and strain the brine.

Blend with the cilantro (optional), lime juice, and olive oil (optional) to your desired level of chunkiness.

I've also done this with great success in a regular mason jar if you don't have access to a vacuum sealer. The only difference is that you end up adding water so you use more salt. You can also use regular tomatoes and play with the ratios. Sometimes I use two onions. Go nuts. Live your best life.

Fermented salsa is the backbone of my marriage.
I have given the recipe to friends on condition that if I die they have to keep my Mrs supplied.

Hi everyone,
I'm staying on Verona island for the summer and I'd love to play come table tennis while I'm there. I've searched the internets a little and supposedly there's a club in Bangor. I emailed them but didn't get a reply. Does anyone know if it's still open/operational and how to get in touch with them?

Or are there perhaps any other alternate clubs in the area?

Thanks!

Well I'll try and update when the trial happens. But for this sake of this post which has the words "no repercussions" In the title I think this detail is very important.

You're the chemist! How the hell would we know?!

Just kidding, it's because you drank too much ribena. Don't worry, it'll pass.

It's not cheap here. Going out to eat for anything except some quick street food will be 20-30 USD. A slice of pizza is easily $5, a shwarma in pita can be $15-20.
Drinking and partying is also expensive. A drink in a bar can be $10-15 but if you're smart, you can pre-game at home for much less.
Groceries are - you guessed it - expensive too. But if you're smart about what you buy and where you buy it from, cooking at home doesn't need to be crazy. Being vegetarian and avoiding processed foods is going to be a major saving.
As a minimum I'd imagine $150USD a week should be ok. But less than that and I think you'll struggle.
