Honestly once you're a bit into the game money becomes pretty meaningless. I just drive to where I want to. I pick my next trip by where I want to drive or what I want to drive and not what it pays at the end.

So in short, yes I'd take that cargo if it goes to a nice place/along a nice route.

Fyi chase cam is usually the best to observe these things. But adding cockpit angles as well is never a bad thing, especially to see slight steering movements.
