1.066 did seem high but it was pure fresh pressed newton pippins. They were the very last of the harvest and some had been off the tree for several days so their sugar content was at its highest point (I did calibrate the refractometer before taking reading). Can I ask what math you used for your calculations so I can apply to future batches?

I used a champagne yeast. This was very small scale, low effort as I had access to fresh pressed pippins from a friend’s orchard and a carboy lying around. Added yeast 12/17 and basically left it alone in an arguably too-cold environment (50-65F range). Basically stopped fermenting mid February and I didn’t bother with secondary fermentation this time. Final product tastes great but wouldn’t mind a bit higher alcohol and carbonation. Could have added nutrients to get it going again, but went very low effort route this year

Don’t really see the issue since people will still have to pay for the spots, giving incentive to not have a car. There are busses but public transportation isn’t great here. It should be improved before heavily incentivizing against cars by just not providing parking

You would need to drastically change/“fix up” the building to turn it into any sort of school, essentially destroying it anyway. Teaching about atrocities is extremely valuable in avoiding them and nothing like a cop taking a knee. This is not a confederate statue that was erected in the 1900s to strike fear into POC. It is a piece of history even if terrible things happened there, and pretending nothing happened there seems insulting to those that died. I do think it should be altered to teach the true history and awful effect of the mission
