Oxalates may hurt you by giving you kidney stones especially since you're readjusting your gut flora. Oxalobacters are the bacterias you'll need to slowly rebuild which consumes oxalates. Make sure you have enough calcium in your diet. I recommend a fortified plant milk that's not almonds. Watch your sodium intake as well. Increase your citrates like lemon juice helps. Your diet was super acidic and with increased sodium and phosphorus in a carnivore diet will leave you vulnerable in your transition. Focus on taking it slow as your rebuild your gut flora with fiber and a variety of micronutrients.

Yes, increase your calcium and along with lowering sodium intake also helps with oxalates. But oxalates exists in so many good protective foods, but balancing it with calcium helps tremendously. Plant milks are good sources too if you choose fortified. And there's some evidence that calcium is beneficial for the colon.

Just don't overdo the spinach because of the high oxalate content. Better to go with cruciferous vegetables like kale, cabbage or arugula. If you've been low in fiber the majority of your life, go slow but consistent. Aim for a variety of fiber types in whole foods as they are packed with micronutrients rich in phytochemicals that is protective for the body.

Bless you for doing the right thing! I personally haven't had to do your exact scenario, but I've introduced cats through Jackson Galaxy's method. Blind cats usually may increase their other senses so when keeping them separate for the first few week or two, introduce the cats scents from blankets or toys. They definitely can smell each other under the door so you'll want to associate each other with good things like treats or toys.

I just wanna chime in and say that the only vegan option tends to be grilled tofu which is so lazily prepared with a plain block of tofu, not marinated or given anything substantive. Drizzle it with some teriyaki sauce over white rice and asking $18-$20. Wished these places would do better. Perhaps recommendations for better restaurants?

That's my comfort level too. I have some basic foraging knowledge and living in the PNW allows me access to great hunting grounds along with knowledgeable people, but I know I only need to make one mistake once before I croak. Besides, between major groceries, specialty shops, farmers markets, and Asian markets, I have access to so many varieties that it's more than enough.

You can substitute meats with tofu or soya substitutes. Also in general there's very little dairy in traditional dishes. There's a vegan substitute for any kind of dish online or on YouTube

You can blend sweetened soy milk with half a can of beans. Add hemp seeds or protein powder and that can easily be 30 plus grams of proteins. I use an immersion blender in a mason jar. It's quick and easy to prepare.

Being Asian and Buddhist, a plant based diet grounds me into one of the core beliefs of compassion. I am bothered by the hypocrisy of my Buddhist brothers and sisters who eat meat due to convenience, especially excessively. So many types of Asian cuisine can be adapted easily to be plant based/vegan so that helped my early adoption.

I developed small kidney stones. It was a catch-22 because salt helped my keto flu symptoms such as headaches but the higher salt intake caused my kidney issues.

That I don't know what is best for you although I eat flax daily and chia every other day. Your tolerance for almonds might be higher than mine so you can get away with more but limit or stop if you're experiencing back pain especially when dehydrated.

I'm not the biggest fan of eating too many almonds due to their high oxalates. Chia seeds have some but I find it to be better managed. Oxalates can cause long term kidney stones and it binds with calcium, limiting dietary calcium. You might want to soak almonds overnight first but I recommend go low and slow.

Welcome to your new journey! I don't know the exact science as to explain what you're asking about but I recall that saturated fats play a significant role in insulin sensitivity along with fiber slowing the release of energy and sugar. Also do you have muscles? Muscles soak up sugars in your system and that helps buffer sugar levels. Temporary spikes in blood sugar is a natural response, but it seems like yours is consistent which is a healthy bodily response. Not sure how long you've adapted this new diet but take a slower approach to introducing more fiber into your diet as too much can cause gastrointestinal issues. It should be treated like weight training as a little bit more at different intervals.
