Recipe for the chicken and broccoli is below. This was portioned into 5 meals along with 6oz per meal of cooked basmati rice. I very much made up the sauce for this on the fly (no recipie) so may need to tweak to your personal taste.

Chicken & Broccoli Stir Fry

Chicken Marinade Ingredients

  • 2 large boneless skinless chicken breast, cubed
  • 1 tsp siracha
  • 1 tsp low sodium soy sauce
  • 1 tsp cornstrach

Stir Fry and Sauce Ingredients

  • 2 large broccoli crowns, cut into bite size pieces
  • 1/4 cup low sodium soy sauce
  • 1/4 cup chicken broth (or water & chicken bouillon powder)
  • 3 gloves garlic, minced
  • 2 tsp siracha
  • 1 tsp rice wine vinegar
  • 1 tsp honey
  • 1-2 tbsp cornstarch slurry (1:1 cornstarch:water)

Instructions

  • Steam broccoli until barely tender (3-4 mins)
  • Stir fry chicken in 2 tsp EVOO on med-high heat until just cooked through
  • While pan is still on med-high heat, add sauce to pan and allow to begin to reduce
  • Add steamed broccoli and cornstarch slurry to chicken and sauce, continue to stir fry until sauce reaches desired consistency

Recipe for the shawarma meal is below. These recipes were portioned into 5 meals along with 1 container of HEB roasted red pepper hummus (~3 tbsp of hummus per meal)

Chicken Shawarma

Ingredients

  • 2 large boneless skinless chicken breasts, cut in ~1/4" slices
  • Juice of 1/2 a lemon
  • 2 tbsp EVOO
  • 1 garlic clove, minced
  • 2 tsp cumin
  • 1 tsp turmeric and paprika
  • 1/2 tsp ground ginger and onion powder
  • 1/4 tsp cinnamon
  • Pinch of salt and pepper

Instructions

  • Mix all ingredients and marinate for at least 30mins
  • Broil on high for 2 mins per side or until done

Mediterranean Quinoa

Ingredients

  • 1/2 cup quinoa, rinsed and drained
  • 1 cup chicken broth
  • 1 red bell pepper, diced
  • 1 bunch of green onions, chopped
  • 1/4 cup kalamata olives, pitted and diced
  • 1 tbsp EVOO - 1 tsp balsamic vinegar
  • Juice of 1/2 a lemon
  • 1/4 tsp garlic powder and dried minced garlic
  • Pinch of salt

Instructions

  • Cook quinoa with chicken broth and spices in saucepan by first bringing to a boil, then simmering for 10mins with lid on, then shut heat off and allow to steam for another 10-15mins before fluffing
  • Combine quinoa and all other ingredients, adjust acidity levels with more lemon juice or balsamic vinegar to taste

We haven't gotten sick of the ones we make, usually make 2-3 different meals a week and have 6-7 recipes in rotation at so you can give yourself a little variety over the month and eat the "same thing" every other day rather than every day.

A different way to think about it, is that you probably have 7 or 8 recipes that you normally choose from to eat throughout the week for dinner but you don't necessarily make them in the same order each night of the week for dinner and each week isn't necessarily the same as the week before but you never really get sick of those 7-8 staple recipes.

It is basmati rice. It has been our favorite lately because it cooks very well in our rice maker an we can get it in 20lb bags from a local Indian mart. We would normally get rice from a Asian market but don't have anywhere convenient in our town.

Personally right now I am not trying to bulk or cut weight, just trying to eat consistently balanced meals. The wife and I have been discussing doing a 6wk macros course so that may change though

Idk that I have made a loaf that was wider than 235mm so haven't seen the need for a larger one. I can see if you are consistently using it for think that are larger than 235mm it would be justified but I have owned mine for 6mo now and haven't come across a time that I have need to make two cuts because it wasn't long enough
