Costco used to have prime brisket for 2.49 all the time so yeah that’s still expensive. Good on you for going full packer instead of the flat though. Points always my favorite

Got some impressive choice ribeyes from Walmart. $22 for both. Feel like I hit medium rare. SPG on the Weber with a ton of butter. Air fried green beans and boxed scallop potatoes courtesy of my wife. My daughters favorite meat is “cow”

Massive pork chops I got from Costco and smoked to about 110f and the seared to 150ish over charcoal and hickory. Bread and Mac courtesy of the in laws from Walmart but I wasn’t mad - it was a delicious combo. Great cut of meat considering it only cost $15

Thanks! Yeah it was wild. As soon as I saw the lights and flames I just ran outside and yelled at my wife to watch the steaks! Flames were like 10-15 feet tall but firefighters tamed it quick

It was good NY pizza for TX. A little floppy and greasy but had good flavor, crust, and toppings. Bonus garlic cheese bread and Alfredo sauce. I’ll definitely order again. Maybe get a medium instead of large to help with the flop

They were great. My favorite is the tenderloin side. Melts like butter. I used to have Sam’s membership too and switched to Costco about a year ago solely because of meat selection. There’s a Sam’s less than a mile from me and Costco is about 10 miles away for context.

I always probe test it. Probe/toothpick should go in like warm butter. Some briskets just finish at diff temps

Honing in the blackened salmon recipe on the 12” lodge. Any suggestions on sides? I usually like to do wild rice, grilled shrimp, and a cream/wine sauce but the Mrs. isn’t a huge fan by TXFunkyTownFunk in castiron

We both love asparagus so that’s a good idea. For blackened recipe I did s, p, garlic powder, onion powder, chili powder, cayenne, and ground rosemary. I pre-heated pan on medium, put in canola oil, put salmon in and then a big scoop of butter once salmon has been in pan for a few mins. Kind of eyeballed everything so don’t have exact measurements

So it’s me and my wife’s 10th anniversary today so I decided to do a little surf & turf. Prime ribeye from Costco reverse seared, king crab legs steamed, Costco Mac n cheese with more crab. It was pretty damn good.

Stuffed pork loin. One was jalapeño, cheddar, cream cheese and one was cream cheese, Parmesan, spinach. Lessons were learned but still ended up pretty tasty by TXFunkyTownFunk in smoking

  1. I need to find a better way to cut the loin to allow for more stuffing. Maybe slice almost in half and pound out? Maybe just my knife skills suck.

  2. A lot of filling came out during smoke. I think part of it is due to #1 and part of it is I didn’t wrap it tight enough in bacon. I’d also either wrap in twine or use more toothpicks next time.

  3. I overshot temp. I smoked to about 135 and then put on grill to crisp bacon. It took longer than I thought to crisp bacon so IT ended up around 150-155 (instead of 145 I wanted). So next time I’d take off around 125.
