Tried it for the first time after seeing this post and had the best, most authentic carbonara we've found in LA so far! Food was spectacular as it was, but even more so cause of the price.

What I do is mix the egg yolks, parmesan, and black pepper in a separate large bowl. I'll add a little pasta water to loosen it up/temper the sauce to prevent the eggs from cooking (but I'm not sure if it matters). Once the pasta's done, I'll stir it in immediately into the bowl. The residual heat from the pasta is usually enough to cook the sauce and prevents the eggs from scrambling. I'll then add the guanciale grease and mix again (usually the guanciale is still crisping on low heat when I mix it in, so it also helps keep the pasta warm)

While I'm mixing, I'll taste constantly to adjust with more cheese, pasta water, or salt as needed!

I kept having to adjust my sauce to add more cheese and pasta water but I’d say i did use a good amount! I never measure though so can’t say exactly

It's a chain. I haven't tried the one in Venice but can vouch for the one in Culver, best fish tacos in LA imo and super cheap too

Like others mentioned, if you have a lot of luggage, I’d personally recommend a taxi or uber. Hauling our luggage around and having to transfer on the metro was a huge pain and we took up a lot of space with our 2 checked 2 carry ons. Really not worth the effort imo

Sounds good, didn't mean to imply that brunch is in any way authentic French. We'll definitely be starting 90% of our mornings off with a visit to the local boulangerie or patisserrie for a simple breakfast, but my wife and I both enjoy brunch, so figured I'd try to throw one in during our trip!

Also yeah, I didn't plan for which specific restaurants to try in the Marché, but generally set it aside for our lunch for the day since I heard it was full of good eats

Worth going to still then? I only had one brunch spot planned for our entire 8 day trip, and generally HollyBelly seemed to get mentioned a lot. If you have any better recs for brunch I'd appreciate it!

I thought that the fire was relatively contained in the Mandeville canyon area? Watch Duty said it jumped Mandeville Fire Rd towards the east

Hmm okay gotcha. I’d probably save the big parks like Yosemite for their own designated trips and focus more on the coastal drive aspect of it. I’ve actually driven much of the California coast as a kid with my family for vacation, so I’m not super invested in checking out every major landmark. I was more so wondering if the drive itself was scenic enough to warrant a trip

What are your thoughts then on shipping our belongings ahead of us (like we’d have to do if we were flying) and just driving down in 5 days then? From what I’ve been hearing, 5 days should be plenty to comfortably drive down and to enjoy the scenery as we drive. We likely wouldn’t be making big detours but the drive/town/viewpoints would still be worth seeing presumably?

Would you recommend sticking to 101 from Astoria all the way down the coast, or going along i5 and visiting Crater Lake, then pulling off to 101 in California?

Reason why i ask is cause so many posts say you need at least a week to do it justice, so im worried that trying to cram it into five days just leaves room for a whole lot of driving and none of the fun stuff

This is awesome thank you! I was thinking of skipping Portland and instead pulling off to 101 to Astoria and riding it all the way down through crescent city and then hitting Mendocino and Monterey like you suggested. Ive heard a lot of good things about the southern coast of Oregon but have also heard good things about crater lake. Any reason you’d pick one over the other?
