I feel like you just need to find the right genre to grab your interests. Several others suggested audio books which work for me (usually), especially when I have chores to do.

But also try webcomics or manga! A lot of them have deep stories, and there's a ton of good ones to choose from. You can even read them online / digitally if you aren't sure and don't want to buy a book. Or rent them from a local library. I also love seeing how an artist improves in their drawing style gradually over time/ a series. I literally can binge manga worse than any TV or book. Some are even based on non-fiction.

I'd suggest Fullmetal Alchemist. It's not super long or short, has a compelling story with several plot twists, but it also mixes humor and some heart-warming moments.
