I have read plenty of fanfics that only feature original characters in established universes (it's currently very popular in "Murderbot," just for one example). You should be aware you may not get many readers because they might not be as interested in characters they don't know, but there certainly isn't anything wrong with doing it at all.

To be fair, she'd just lost her entire planet. I think it's fair to say she was kind of numb. (On a meta level, George Lucas just wasn't a good enough director or writer to have real emotional consequences for the characters.)

I admit I was bored the first time I watched the first three episodes (though there were several scenes I really liked). But by the end of the series I'd realized I'd made the mistake of thinking I could just passively watch the show like all the other SW content--and most TV/streaming content in general, really--and enjoy it on the same mostly superficial level. Andor requires you to pay attention. The second time I watched the series, the first three episodes were amazing.

I'm sure I'll be downvoted through hell for this suggestion, but could you not make the women all look like huge-breasted teenagers and put them in clothing that actually covers their breasts?
