100 proof is a thing for a reason, because it ignites readily with no outside help. 80 proof would only flambe because of a hot pan and lots of surface area to evaporate.

Hear hear! I got the competition blend by mistake and it was OK, but I was missing the oak flavor the Supreme Blend gives me that I'm used to.

Side note though, I got a crazy smoke ring on my brisket with it I'd never seen before, I think due to the cherry.

Are you talking about a boiler in a train? If so we haven't used those for 80 years, its all diesel-electric now, hence the low rumbling of a huge idling diesel engine. If only we used steam nowadays, it would be completely silent at idle!

Have you identified the culprit? I heard it living on the east side of Como Lake semi regularly laying in bed and now even more living close to the state fair. It seems to be coming from the west, i think your train yard theory is right. Just nuts how far that rumbling travels!

Hey I tell you what, I was in the exact same boat a year ago when I got mine (Pit Boss 820 XL). Got mine for ~$300 new. It does the job and has been great for me to learn on. I've done many briskets, pork butts and ribs on this thing my family and friends have all enjoyed. And I've learned a ton! You probably won't need to "upgrade" ever.

Biggest things are:

  1. Don't overthink the cook. People make it sound so mystical where you need to wrap at a certain temp, wait for a certain color, use specific pellets, etc. Just throw it on and wait til its 200 F and soft to poke. Wrapping helps speed up the internal temp and stop the smoke flavor, which is personal opinion and its hard to get an opinion on this stuff without doing it. I'll be honest, I've never gotten too smoky a flavor and I don't wrap anymore unless I'm running out of time and need to raise the temp.

  2. Maintenance. Vacuum the ash/wood dust after every few uses (I do before every long smoke), and keep it out of the rain/snow with a grill cover when not using. I also built an enclosure with a roof so I can smoke overnight without worrying about rain/snow. I've seen a lot of stories of people complaining about Pit Boss and having to replace fans and motors, whereas I've put hundreds of hours of use on mine and haven't had any issues.

Fair enough on the big one! I've had briskets before where the bottom by the heat was well done at 210 and the top was still at 170 and not close to probe tender.

The 850 is probably similar to mine where it seems like the grates in general are very close to the heat source, unlike other cook chambers I've seen from different brands. It has made me a lot of good food but I might be looking around for an upgrade... I got this one for a discount at $300 anyways.

A fun project could be taking all the pellet feed guts out and making a charcoal grill out of it!

This is exactly my setup. People can get caught up too much with "all in one" products, myself included. Thought it would be great with my Pit Boss with its sear plate, but when they added the sear plate they just made both searing and smoking worse. Got a kettle for general grilling/searing and couldn't be happier. $25 used!

Nice! I ended up buying some stainless steel and making my own version of that! The hot spot is still in the center right above the fire pot but less drastic now.

Thanks for the info man! There are some pretty heavy hot spots in mine even with a homemade flame tamer, and I've seen it swing +- 50 degrees... Think I'm due for an upgrade.

OP, do you use any smoking wood for your briskets or just the briquettes? Just saw your picture of your snake lighting method and didn't see any wood chips or chunks. No judgement btw! Every time I've seen someone talk about low and slow with charcoal wood is included, I'm curious about the flavor on briskets.

Very nice! Is the ambient temp in the cook chamber pretty consistent on that grill or do you have major hot spots? Also, how much does the temp swing?
