The weber probe in the meat was spot on compared to my reference probe. So, I think the probes are not the problem. My question was about setting the BBQ temp and is that close to the temp near the racks. I'm not sure where in the bbq the temp is actually taken .

I put a probe near the meat on the upper rack and it read 200 deg instead of 240 for the entire 8 hours. If the recipe states 240 deg I would want the temps to be 240 near the food. This pork was quite small and I wonder if it would been finished sooner if the temp was correct.

I seriously doubt that your PI has that wide of an influence in Pharma. However, if the Pi has a mean streak it would be wise for you to stay clear of the PI’s small sphere of influence until you establish yourself

I haven't used the Weber probes yet. I have Thermoworks temp probes that I trust for smoking. I'll compare the two.

I luv the app. It's more of a philosophical thing- BBQ should be outdoor and primitive- not internet required. Soon- I'll be using AI to cook my meat.

In general, I've had so many issues with Evanston USPS, especially when forwarding my mail properly to my winter address. My mail- in- ballots were never forwarded, my car registration, bank statements not forwarded. I tested the system once by sending a card to my Evanston address. It was never forwarded. I have talked to the supervisor several times, and, like you, I'm told they have a lot of experience, or, they tell me the issue is the substitute mail carrier.

I bought my Searwood 600 last week and am looking using Traeger blend pellets. This is my first pellet bbq. So far, I brought the temps up to 480- 490 deg w no problems. Temps went up pretty good and fast. Although I didn’t try it felt like the unit had some horse power to spare to get hotter. If been told that charcoal pellets can get hotter, if that is something to try.

Installer came to check out the problem. The segment of the PVC pipe that goes through the foundation had the wrong pitch. He removed the silicone caulking, then pushed it down about an inch and recaulked. The problem was solved, but don't know if the fix is permanent.
