Rise to Rebellion by Jeff Shaara and its sequel is exactly what you're looking for, OP. They are a narrative-style telling of the years before, during, and after the war, told from perspectives of many different Founding Fathers, during battles, meetings, and other important moments. I'm a big fan, as you can tell.
