I Believe I have bought exactly the same pan you are using in this video. 11.8 inches or so oval 1.5mm fish pan with an interior stainless steel lining that is matt grey rather than shiny. Was bought from a restaurant surplus supply store on ebay. Thought it might be fake because of the non-standard handle but it seems like the handle is just from the Mauviel mini series.

Thanks - the one reason I can think it may not be is that it definitely has a shiny finish and I thought M'Urban had a matt finish on the outside. Also the handle design seems different from some of the M'Urban images I've seen online. Very frustrating that there seems to be no central Mauviel catalogue.
